Potato salad with Queen Scallops
INGREDIENTS
Salad with queen scallops, onions, radishes, and green peas
Serves 4 people
½ kg left-over potatoes - or potatoes in jar
2 red onions
10 radishes
150g green peas - or edamame beans
DRESSING
3 tbsp extra-virgin olive oil
2 tbsp water
2 tbsp sweet french mustard
2 tbsp dild (fresh or frozen)
INSTRUCTIONS
- Mix the dressing and season accordingly with salt and pepper
- Cut the potatoes, onions and radishes in thin slices
- Sear the queen scallops on both sides on a warm frying pan.
- Mix the salat and queen scallops in a big bowl
- (optional) Serve with good bread
