Potato salad with Queen Scallops


Salad with queen scallops, onions, radishes, and green peas

Serves 4 people

½ kg left-over potatoes - or potatoes in jar
2 red onions
10 radishes
150g green peas - or edamame beans


3 tbsp extra-virgin olive oil
2 tbsp water
2 tbsp sweet french mustard
2 tbsp dild (fresh or frozen)



  1. Mix the dressing and season accordingly with salt and pepper

  2. Cut the potatoes, onions and radishes in thin slices

  3. Sear the queen scallops on both sides on a warm frying pan.

  4. Mix the salat and queen scallops in a big bowl

  5. (optional) Serve with good bread
